We turn on the oven to preheat at 180* (convection mode or top and bottom heating);

We prepare a classic sponge cake: carefully separate the egg whites and yolks, pour the whites into a clean dry bowl and gradually add half of the sugar (preferably with a pinch of salt), whipping until stiff peaks form. In another bowl, beat the yolks with the remaining regular and vanilla sugar until fluffy and light. Using a spatula, fold the whipped whites into the yolk mixture and sift both types of flour in, mixing from bottom to top to keep as much air volume as possible.
- Chicken egg (large): 4 pieces
- Brown sugar: 120 g
- Vanilla sugar: 5 g
- Whole wheat flour: 80 g
- Oat flour: 40 g

Washed, cored apples are sliced, drizzled with lemon juice, and optionally sprinkled with cinnamon;
- Antonov apples: 450 g
- Freshly squeezed lemon juice: 10 ml
- Powdered sugar with cinnamon: to taste

Carefully grease a round, oval, or square shape (diameter - 20-24 cm) with a piece of butter, then fill it with 1/2 of the dough. Evenly place apple slices and cover with the remaining dough. Smooth the surface;

Bake the pie for 40-45 minutes. Leave the finished charlotte in the closed oven for another 15 minutes, then cool, remove from the mold, and sprinkle with powdered sugar to taste.
