This recipe is an adapted version of classic American muffins created for those who watch their diet but don't want to give up desserts. Using oat, rice, and corn flour makes them healthier, while kefir adds special softness to the baked goods. The cherry filling thickened with cornstarch adds juiciness and brightness. Grind the oatmeal into flour.
- Oat flakes: 100 g

Add rice flour, corn flour, cocoa, vanillin, cardamom, and baking powder, and mix.
- Corn flour: 50 g
- Rice flour: 50 g
- Cocoa: 2 tablespoons
- Vanillin: pinch
- Ground cardamom: 0.5 teaspoon

Combine eggs with kefir and sweetener, whisk until smooth.
- Chicken egg: 2 pieces
- Kefir: 300 ml
- Sugar substitute: to taste

Add the dry mixture, mix thoroughly, the dough should be like medium-thick sour cream, if necessary, add more flour or kefir to achieve the desired consistency.
- Corn flour: 50 g

Place the frozen cherries in a saucepan and put it on the heat. When they start to melt and release juice, mix starch with water and pour it over the cherries, then cook while stirring constantly until thickened.
- Frozen cherries: 200 g
- Cornstarch: 1 tablespoon
- Water: 20 ml

In silicone muffin molds, place 1–1.5 tbsp of chocolate batter, then 1–1.5 tsp of cherry filling, and then cover with more batter to completely cover the cherry layer, filling the molds to 3/4.
- Cocoa: 2 tablespoons

Bake in a preheated oven at 180°C for 30 minutes.
