Sweet buns with cinnamon and nutmeg

Sweet rolls with cinnamon and nutmeg are true comfort in baking. Their history roots back to Russian culinary traditions where spices added a special aroma to homemade goods. Knead the yeast dough. Heat the milk to 30-35 degrees. Dissolve the yeast in a small amount of milk. Add flour, 1 egg, 100 g of sugar, salt, ground nutmeg to the remaining milk and knead the dough. Add the dissolved yeast and 75 g of melted and slightly cooled butter to the dough. Knead until it easily separates from your hands and the sides of the bowl. Shape the prepared dough, sprinkle lightly with flour, cover with a napkin and place in a warm place for 1-1.5 hours. During this time it should be kneaded several times. The finished dough should increase in volume by about twice.
- Milk: 250 ml
- Dry yeast Dr.Oetker: 10 g
- Wheat flour: 750 g
- Chicken egg: 2 pieces
- Brown sugar: 2 tablespoons
- Salt: 0.5 teaspoon
- Ground nutmeg: 0.5 teaspoon
- Butter: 125 g

I prepared the dough in the bread maker, loading all the ingredients according to its instructions, in the 'Dough' mode. The dough should be moderately firm and increased 2-3 times.

Divide the dough into 2 parts.

Roll out part of the dough into a rectangle.

Grease with melted butter, sprinkle with sugar and cinnamon, and roll into a log.

Cut the roll into triangles.

Place the triangles on a greased baking sheet seam side down.

Press down the middle of each bun with the blunt side of the knife.

Brush the buns with egg and sprinkle with sugar.

Bake at 220 °C for about 10 minutes until done (depends on the oven).
