Pumpkins are ripe - and here is the traditional Bulgarian pumpkin pie to go with them.

1
Peel the pumpkin and grate it on a coarse grater.
- Pumpkin: 1 kg

2
Chop the nuts finely.
- Walnuts: 100 g

3
Lay a sheet of phyllo on the table and brush it with melted butter. Place another sheet of dough on top and brush it with butter as well.
- Butter: 200 g

4
Sprinkle some grated pumpkin on the dough, then add a bit of nuts, cinnamon, and sugar on top.
- Pumpkin: 1 kg
- Walnuts: 100 g
- Ground cinnamon: to taste
- Sugar: 200 g

5
Roll the dough into a sausage, folding the sides to prevent the filling from spilling out.

6
Grease the round baking pan with vegetable oil.
- Butter: 200 g

7
Place the resulting sausage in a spiral in the center of the mold

8
Repeat the procedure several times. Place each new sausage as a continuation of the previous one. In the end, there should be one large spiral resembling a snail.

9
Brush the pie with slightly beaten egg yolk, sprinkle with sugar and cinnamon.
- Egg yolk: 1 piece
- Sugar: 200 g
- Ground cinnamon: to taste

10
Send to the oven preheated to 180 degrees for 30-40 minutes.
