Prepare yeast dough. Dissolve the yeast in milk, sift the flour into a mound and make a well in the center. Pour in the dissolved yeast, sprinkle with flour, and place in a warm place for 15 minutes.

Add eggs, butter, sugar, lemon zest, and a pinch of salt.

Knead the dough. Knead until the dough starts to bubble. Cover with plastic wrap and let rise for 40 minutes.

While the dough rises, prepare the filling. Boil the milk and add poppy seeds.

- Poppy: 250 g

Mix and let sit for 10 minutes to swell, then strain.

Place the swollen poppy seeds in a saucepan, add honey, and simmer for 7 minutes.

Roll out the dough on a floured surface to a thickness of 0.5 cm to fit the size of the baking tray.

Evenly distribute the filling over the dough, leaving the edges open about 2-2.5 cm.

Preheat the oven to 220°C. Grease the baking tray for the roll with oil.

Roll the dough with two rolling pins from both long sides towards the center. Transfer to a baking sheet and leave for 20 minutes.

Mix the sifted powdered sugar with egg white and lemon juice to make a thick icing.
