Mix flour, softened margarine, and half of the sugar until a uniform crumbly mass forms. Combine sour cream, 2 egg yolks, baking soda, salt, and vanillin and quickly whisk with a whisk or mixer. Pour the beaten mixture into the crumbly mass and quickly form a dough that you roll into a ball. Cover the dough ball with plastic wrap and leave it in the refrigerator for about 30-40 minutes.
- Wheat flour: 500 g
- Margarine: 200 g
- Sugar: 150 g
- Sour cream: 100 g
- Chicken egg: 2 pieces
- Slaked soda: 0.5 teaspoon
- Salt: 1.3 teaspoon
- Vanillin: to taste

Mix cottage cheese with 2 egg whites, half the sugar, and vanillin. If the cottage cheese mixture lacks moisture and crumbles, add a spoon of sour cream. The pliable cottage cheese mixture can be whipped with a mixer for more airiness if desired.
- Cottage cheese 1%: 400 g

Preheat the oven to 200-220 degrees. Divide the dough into pieces suitable for rolling out. Roll the dough to a thickness of 7-10 mm and cut out the base of the pastry. Spoon the cottage cheese onto the base, ensuring it doesn't overflow when folded in half. The top half does not cover the bottom, leaving the pastry slightly open. Place the prepared pastries on a baking sheet lined with greased paper.
