Prepare the dough. In a saucepan, melt 60 grams of butter, 60 grams of sugar, 100 ml of milk, and a pinch of salt. Let it cool.

In a separate bowl, mix 100 ml of warm water, yeast, and a teaspoon of sugar. Let it sit for 10 minutes — the liquid will become cloudy and start to foam.
- Water: 100 ml
- Dry yeast: 7 g

Pour the yeast into a saucepan with cooled butter. Add two beaten eggs. Slowly add flour, mixing gently.

Place the dough on a dry, clean surface sprinkled with flour and knead for 10 minutes.

Place the dough in a greased bowl, cover with a damp cloth, and let it sit for an hour until it doubles in size.

Filling. In a saucepan, melt 50 grams of butter and 150 ml of milk, add poppy seeds, the remaining sugar (about 3 tablespoons), a pinch of salt, and lemon zest. Cook on low heat for about 3 minutes until thickened. Cool down.

Roll out the risen dough into a rectangular sheet 5 mm thick. Place the filling on top and carefully roll the dough into a tight roll. Cut into pieces and arrange in a form you have (I arranged them in muffin tins). You can also make it in a round shape like a flower.

Brush the buns with egg and bake for 20 minutes at 200°C.
