First, make the cookies. Separate the yolks from the whites. Beat the yolks with sweetener, flour, starch, and water. Whip the whites with a pinch of salt until thick and firm foam forms. Gently combine the two mixtures and pour into a mold.
- Chicken egg: 2 pieces
- Oat bran: 2 tablespoons
- Cornstarch: 0.5 tablespoon
- Water: 2 tablespoons

Bake in a preheated oven for 10 minutes. Remove, cut into long cookies, and let cool.

Next is the soaking. Mix coffee with cognac or rum. It can also be made without alcohol or using any syrup or liqueur. However, cognac adds a very interesting and fitting nuance, and there's very little of it.
- Black coffee: 100 g
- Rum: to taste

Whip the cottage cheese with a little milk, vanilla, and sweetener using a mixer until it has an airy consistency.
- Cottage cheese 5%: 200 g
- Milk: 70 ml
- Vanillin: 2 g

Assemble the dessert. Dip the first half of the cookies in coffee and place them on a plate or in any convenient shape.
- Black coffee: 100 g

Spread half of the cream on top. Then add a second layer of coffee-soaked cookies and more cream. You can also spread some cream on the sides of the dessert. Refrigerate everything for a few hours, preferably overnight. In the morning, sprinkle with cocoa. Tiramisu is ready.
