The main bread in the North Caucasus is flatbread called churek. Our recipe calls for churek made with kefir and corn flour, although sometimes they are made with wheat flour. It is best to fry the flatbreads in butter, and at the end of cooking, the pan is covered with a lid so that the bread rises.
