Honey gingerbread

Melt honey, sugar, and butter in a water bath until the crystals are completely dissolved.
- Honey: 50 g
- Cane sugar: 20 g
- Butter: 70 g

Add spices to the warm mixture, stir, and let it cool completely.
- Grated ginger: 1.5 teaspoon
- Ground cloves: 0.5 teaspoon
- Nutmeg: 0.5 teaspoon
- Ground cinnamon: 1 teaspoon

In a deep container, beat the egg, pour in the cooled mixture, and sift in the flour, adding salt and malt. Add baking soda quenched with lemon juice and leave the dough covered for a few hours in the cold.
- Chicken egg: 1 piece
- Whole grain flour: 215 g
- Salt: pinch
- Rye malt: 7 g
- Slaked soda: 0.3 teaspoon

On a floured table, roll out the chilled dough to a thickness of about 1 cm and cut out desired themed shapes. Bake the cookies at 165°C for about 13-15 minutes.
