Dough. Sift the flour (300 g), grate the butter (better to keep it in the freezer first). Rub the flour with the butter by hand until crumbly.

Add ice (!) water and roll the dough into a ball. Wrap the dough in plastic wrap and place it in the refrigerator for at least 20 minutes.

Filling. Peel the apples from seeds and skin, cut into small cubes, and sprinkle with lemon.

In a separate bowl, mix sugar, the remaining flour, and spices. Then add the mixture to the apples and mix well. (At this time, turn on the oven to preheat!) Take the dough out of the fridge and divide it into two slightly unequal parts. Roll out the larger part and place it in the mold, making edges. Simply roll out the smaller part. Spread the filling on the dough, smooth it out, cover with the second layer, and pinch the edges. Make a small hole in the middle.

Brush the pie with egg and place it in a hot oven. Bake at 220 degrees for 15 minutes, then at 180 degrees for another 45 minutes.
