Coffee cookies are an exquisite French dessert with a rich aroma and flavor of coffee. They embody the elegance of French cuisine by combining softness and a light crunch. Historically, such cookies appeared in Europe due to the popularity of coffee in the 17th century, becoming a favorite addition to morning espresso. The rich coffee flavor harmoniously complements the sweetness of sugar and the tenderness of vanillin, while a slight saltiness enhances the depth of taste. These cookies are perfect with a cup of freshly brewed coffee, revealing all shades of the coffee bouquet. They can be served for breakfast, with tea, or as a treat for evening conversations. The simplicity of preparation makes them accessible even for novice cooks, while the aroma of fresh baking fills the home with coziness and warmth.

1
Mix sugar, eggs, and milk well and add vanillin.
- Sugar: 1 glass
- Chicken egg: 1 piece
- Milk: 2 tablespoons
- Vanillin: to taste
2
We add flour, baking powder, salt, soda, and coffee.
- Wheat flour: 1.5 glass
- Baking powder: 0.3 teaspoon
- Salt: 0.5 teaspoon
- Soda: 0.3 teaspoon
- Instant coffee: 2 tablespoons
3
We mix the dough. When the dough is smooth and uniform, we roll it into balls about 3 centimeters in diameter. We shape them into cookies. I do this with wet hands (so the dough doesn't stick).
4
Bake until light brown for 7-8 minutes.
