Peel the bananas and mash them into a puree. Drizzle with lemon juice and mix to prevent browning. Combine with milk until smooth, add olive oil and stir.

Mix almond flour, spelt flour, sugar, salt, and baking powder separately.
- Almond flour: 0.6 glass
- Spelt flour: 2.5 glasss
- Sugar: 0.5 glass
- Salt: 1 teaspoon
- Baking powder: 4 teaspoons

Lightly roast walnuts or other favorite nuts in a dry pan and chop them coarsely.
- Walnuts: 75 g

Combine the banana mixture with the flour mixture, add crushed nuts, and mix quickly without trying to achieve uniformity; let lumps remain.

Place paper muffin cups and spoon thick batter into them up to 2/3 full. Sprinkle oats on top.
- Oat flakes: 1 tablespoon

Bake in a preheated oven at 200°C for about 25 minutes. Cool on a rack for a few minutes and serve warm. A total of 15 muffins are made.
