Preheat the oven to 170 degrees.

Take the butter out of the fridge beforehand to soften it to room temperature.

Crush the cookies into crumbs, add melted butter to them, mix thoroughly, and let the cookies soak.
- Butter: 150 g
- Shortbread: 300 g

Place the mixture in a baking dish, evenly spread the cookies on the bottom and sides with your fingers. Put the dish in the oven for 10 minutes. Then take it out and cool the resulting crust.

While the cake cools, set aside 4 apples, peel the rest and be sure to remove the core. Cut the apples into small cubes.

Take a pot, mix sugar, cinnamon, and vanillin in it, add apples, mix everything, and add 2 tablespoons of water. Place on the heat, bring to a boil, stirring constantly. Cook the apple mixture until slightly thickened-caramelized. Remove from heat.

We clean the remaining 4 apples and remove the core. Cut 1 apple into cubes and add it to the apple-caramel mixture. Slice the other apples into thin half-rings.

Carefully spread the apple-caramel mixture on our crust, distributing it evenly. It should be below the sandy edges. Then, place apple slices in a circle on top.

Remove the apples, they should acquire a golden hue. Carefully spread a layer of apricot jam on top, it will serve as a kind of glaze. There's no need to cover the edges of the layer with jam.
