Germany gave the world the New Year tree and the Christmas advent calendar. But it has kept many holiday signs and traditions only for itself: for example, if it is customary to celebrate Christmas here with a roast duck or goose, then the New Year is celebrated exclusively with a good piece of baked pork leg or ham, since it is believed that the bird will fly away and take good luck with it, and the pig will definitely not go anywhere and will bring prosperity and well-being to the house. The taste of the New Year in Berlin is the famous donuts with filling, Berliners. Once they were a symbol of the fact that the city split in two remains united, and today they have become simply a favorite holiday dessert.

Dissolve yeast in 100 ml of warm water. Let it sit for 5 minutes. When the yeast starts to foam, add flour, salt, buttermilk, eggs, 75 grams of sugar, oil, and vanilla extract. Knead the dough in a mixer on low speed. After 1 minute, increase the speed to maximum and knead for another 2 minutes.
- Dry yeast: 6 g
- Wheat flour: 500 g

- Buttermilk: 175 ml
- Chicken egg: 2 pieces
- Sugar: 300 g
- Butter: 85 g
- Vanilla extract: 0.5 teaspoon

Grease a large bowl with oil, place the dough in it, cover with plastic wrap, and let it rise in a warm place for 2 hours. The dough should double in size.

While the dough rises, mix the remaining sugar with cinnamon in a bowl. Transfer the jam into a pastry bag with a narrow round tip.

When the dough rises, knead it and roll it out to a thickness of 1.5–2 cm. Cut out twelve circles about 10 cm in diameter. Place the dough on a baking sheet lined with parchment paper and generously sprinkled with flour.

In a deep skillet, heat vegetable oil for frying to 180 degrees. Carefully fry the donuts until golden brown.

Remove the donuts with a slotted spoon and place them on a napkin to drain the oil. Allow the donuts to cool.

When the donuts cool down enough not to burn your fingers, roll them in a mixture of sugar and cinnamon. Then, carefully make a hole in the donut and fill it with jam about three-quarters full.
