Cherry pie with custard is a true embodiment of refined European pastry. Its roots trace back to the traditions of French and Austrian confectioners who created desserts combining airy dough, delicate cream, and sweet-sour berries. This pie delights with contrasting textures: soft sponge cake with a crispy crust harmonizes with silky custard, while juicy cherries add a refreshing tartness. Its aroma captivates from the first moments of baking, filling the home with warmth and sweet anticipation. Such a dessert is perfect for festive tea gatherings or leisurely evenings with a cup of aromatic coffee. It not only pleases the palate but also offers aesthetic pleasure with its delicate color combination and enticingly soaked structure.

1
We prepare the dough. Beat the butter with 170 grams of sugar with a mixer until creamy consistency. Add 4 eggs one by one, beating well after each.
- Butter: 250 g
- Sugar: 290 g
- Chicken egg: 6 pieces
2
Add sifted flour with baking powder and knead a uniform dough.
- Wheat flour: 250 g
- Baking powder: 1 teaspoon
3
Grease the baking pan with oil and line it with parchment paper. If the pan is detachable, lining is not necessary. Transfer the dough into the pan.
- Butter: 250 g
4
Place in a preheated oven at 180 degrees and bake for 20 minutes.
5
Meanwhile, mix milk, starch, sugar, eggs, and milk in a pot and whisk lightly. Place on low heat and stir constantly (preferably with a whisk) until thickened. Add sour cream and cook while stirring for another 3 minutes. The cream should have the consistency of very thick sour cream.
- Milk: 750 ml
- Potato starch: 1 tablespoon
- Sugar: 290 g
- Chicken egg: 6 pieces
- Sour cream 20%: 600 g
6
We take the biscuit out of the oven and spread cream on top. We place berries on the cream.
- Cherry: 300 g
7
Return the dish to the oven and bake for another 15-20 minutes until the cream sets.
8
Cool the pie to room temperature, then transfer it to the refrigerator for 3-4 hours.
9
The cooled pie can be sprinkled with powdered sugar or grated chocolate.
