Semifreddo is a refined Italian dessert whose name means 'half cold.' Its soft, velvety texture differs from traditional ice cream due to the combination of whipped cream, eggs, and sweet fillings. Vanilla, cocoa, and strawberry in this version create a harmony of flavors: delicate vanilla adds sophistication, cocoa adds richness, and strawberry brings freshness and a slight tartness. Semifreddo does not require a special ice cream maker and is quite simple to prepare: all ingredients are mixed together, poured into molds, and frozen. This dessert is served chilled and garnished with berries and fruits, making it an ideal treat for summer evenings or special occasions.

Separate the egg whites from the yolks. Whip the whites with a pinch of salt until frothy. Whip the yolks with sugar. Whip the cream. Mix the cream and yolks.

Add the proteins, gently mixing with a whisk or spoon. Crush the berries.

Next, divide the mass into as many parts as you will use fillers. In this case, into three parts.

Add vanilla sugar to the first, cocoa to the second, and strawberry to the third.

Place the mixture in molds suitable for freezing. Put in the freezer for 6-8 hours.
