Galette cookies are the embodiment of simplicity and sophistication in French cuisine. Light, crispy, and slightly crumbly, they evoke warm mornings with a cup of coffee or tea. With a delicate dough infused with vanilla aroma, these cookies are perfect for snacking or accompanying desserts. Historically, galettes emerged as simple rustic pastries, but their flavor has captivated even gourmets. Unlike classic cookies, galettes are made without complex ingredients yet remain surprisingly delicious. Their versatility makes them suitable for standalone enjoyment or as a base for desserts with jam or fruits. The ease of preparation makes them an excellent choice for home culinary experiments.

1
Beat the egg with sugar, vanilla sugar, salt, vegetable oil, and milk.
- Chicken egg: 1 piece
- Sugar: 2 tablespoons
- Vanilla sugar: 1 teaspoon
- Salt: pinch
- Vegetable oil: 2 tablespoons
- Milk: 1 tablespoon
2
Sift flour with starch and baking powder. Gradually add to the egg-milk mixture and knead a pliable dough that doesn't stick to your hands (but is not hard!). If necessary, you can add more flour.
- Premium wheat flour: 100 g
- Cornstarch: 2 tablespoons
- Baking powder: 0.5 teaspoon
- Premium wheat flour: 100 g
3
Then roll out the dough thinly (2-3 mm). It's better to roll it on parchment paper or the back of a baking sheet, previously dusted with flour, as it is difficult to transfer to the baking sheet later.
4
Cut out cookies with molds and prick with a fork.
5
Send to a preheated oven at 180 degrees for 7-10 minutes. Once it turns slightly golden ― it's ready!
