Grate the zest of one orange on a fine grater. Squeeze the juice from half of the fruit.

Beat the chilled egg whites into a stable foam. Separately, beat the yolks with sugar until white.

Break the chocolate into small pieces and melt it using a double boiler or microwave.

Now we mix the yolks into our chocolate, then pour in the orange juice and, stirring everything into a homogeneous mass, carefully add the whipped egg whites.

It's time to distribute the mousse into molds and leave it in the fridge for a few hours.
