Pumpkin Lenten Pie "Yantar"

Pumpkin lean pie 'Amber' is a true autumn treat that embodies the warmth of sunny pumpkin, the aroma of spices, and the tenderness of fruity notes. Its roots go deep into European culinary traditions, where lean desserts are especially valued for their rich flavor and texture without using animal products. The bright amber hue of the pie resembles the gold of autumn leaves, while its rich taste harmoniously combines the sweetness of pumpkin, the citrus freshness of orange, and warm notes of cinnamon and clove. A light hint of cognac adds noble depth to it. This pie is perfect for cozy tea time in cold weather; it pairs wonderfully with hot beverages and makes an excellent dessert for those following a lean diet.

Peel the pumpkin from the skin and seeds, cut into cubes about 1.5x1.5 cm. Add sugar and cognac.
- Pumpkin: 600 g
- Brown sugar: 1 glass
- Cognac: 50 g

Grate the zest of a whole orange (without the white layer!)
- Oranges: 1 piece

Squeeze juice from the 'bald' orange, add cinnamon, clove, and honey. Mix this with the pumpkin. Place in the microwave for 1-2 minutes on maximum power - this is necessary for the honey to melt and for the pumpkin to release some juice, (this will make it easier to mix everything). Add raisins.
- Ground cinnamon: 0.5 teaspoon
- Ground cloves: 0.3 teaspoon
- Honey: 2 tablespoons
- Raisin: 190 g

In the prepared aromatic 'mix', we gradually add sifted flour, baking powder (or slaked soda), and mix until homogeneous.
- Wheat flour: 300 g
- Baking powder: 25 g
- Slaked soda: 2 teaspoons

Grease the mold and lightly dust with flour, pour in the batter, and bake in a multicooker for 1 hour 10 minutes or in the oven at 175-180 degrees for 1 hour (check readiness with a wooden stick).
