Gently heat the cream, add mint leaves to it. Remove from heat and let it sit for 10-15 minutes, then blend everything.
- Cream 35%: 300 ml
- Fresh mint: 30 g

Melt white chocolate in a water bath and mix with cream.
- White chocolate: 150 g

Soak the gelatin sheets in 100 ml of warm water.
- Gelatin in plates: 2 pieces

Whisk the egg and one yolk and mix with the chocolate mixture. Then add gelatin to the mixture and mix everything well.
- Chicken egg: 1 piece
- Egg yolk: 1 piece

Pour the mousse into dessert cups and refrigerate for an hour to set. Before serving, sprinkle with crushed pistachios and garnish with a mint leaf.
