There's no need to extinguish it, as it will react with the acids in the kefir. Once the kefir heats up a bit, the baking soda will react and create a fluffy foam.

    Now the pot needs to be removed from the heat. The kefir will be warm, the soda will neutralize and won't be felt in the pancakes. If there's no baking powder, it's okay; fluffy pancakes can still be made without it.
