The preparation of the dough starts with kefir. Pour the kefir into a pot and place it on the stove over low heat. Immediately add baking soda to it. There's no need to extinguish it, as it will react with the acids in the kefir. Once the kefir heats up a bit, the baking soda will react and create a fluffy foam.
- Kefir: 0.5 l
- Soda: 1 teaspoon

Now the pot needs to be removed from the heat. The kefir will be warm, the soda will neutralize and won't be felt in the pancakes. If there's no baking powder, it's okay; fluffy pancakes can still be made without it.
- Baking powder: 10 g

Add eggs, sugar, and vanillin to the kefir and mix everything. Gradually add flour and knead thoroughly with a mixer.
- Chicken egg: 2 pieces
- Sugar: 2 tablespoons
- Vanilla sugar: to taste
- Wheat flour: 200 g

Vegetable oil is added last, when all components have already dissolved in the dough.
- Vegetable oil: 100 ml

Pour half of the batter into a heated, greased frying pan and spread it slightly around the pan. Cook the pancakes on low heat. Once bubbles start to form, flip the pancake. If using a non-stick pancake pan, there's no need to grease it.
