Grate the lemon zest, mix it with flour and baking soda quenched with lemon juice. Grate margarine into the resulting mixture.
- Lemon zest: 30 g
- Wheat flour: 350 g
- Soda: 6 g
- Lemon juice: 50 ml
- Margarine: 250 g

In a separate bowl, beat the egg with sugar and mayonnaise. Add the egg mixture to the flour with margarine and mix thoroughly. Knead the resulting crumb with your hands until a homogeneous mass forms.
- Chicken egg: 1 piece
- Sugar: 100 g
- Mayonnaise: 1 tablespoon

Divide the dough into 2 equal parts: put one in the freezer for 5 minutes, while rolling out the other and placing it on parchment paper greased with sunflower oil.

Take the second part of the dough out of the freezer and grate it on top with a second layer.
