Whisk the yolks with sugar using a mixer for 1-2 minutes.
- Egg yolk: 5 piece
- Sugar: 100 g

Add cream and whip a little more to combine the ingredients well.
- Cream 35%: 500 ml

Pour the mixture into a bowl or pot and place it in a water bath. Cook for 10-15 minutes, stirring regularly with a spatula and preventing the mixture from boiling. If it gets too hot, remove the bowl from the water bath for 30 seconds or add a couple of tablespoons of cold milk or cream to the mixture.

Remove from heat and place the egg-cream mixture bowl in cold water. Cool for a couple of minutes, stirring. Add banana pieces and whip again (mainly to a homogeneous state, but leaving small pieces).
- Bananas: 3 pieces

Mix in the nuts (coarsely chopped; can be dried and roasted beforehand) and chocolate (also in fairly large pieces).
- Walnuts: 150 g
- Chocolate: 100 g

Pour into a freezer-safe container and place in the freezer until ready. I recommend stirring the ice cream a couple of times.
