Sweet rolls with dried fruits

Sweet rolls with dried fruits are delicate dough soaked in fragrant fruit filling. This recipe dates back to ancient European home baking traditions when housewives turned available ingredients into exquisite treats. The combination of prunes, apricots, raisins, and orange creates a rich, sweet flavor with a hint of citrus. Honey gives the filling a velvety texture and natural sweetness. The crispy dough sprinkled with cinnamon and sugar complements the fruit filling, turning each cookie into a harmonious blend of flavors. These rolls are perfect for a cozy tea time, Christmas evening, or simply as a delightful treat for the soul.

1
Sift the flour, cut the cold butter into pieces and turn everything into a crumb resembling raw sand. Add lemon juice, salt, sour cream, kefir and knead a soft not too stiff dough. Wrap in film and put in the refrigerator (ideally for a couple of hours, but 30 minutes will do).
- Wheat flour: 350 g
- Butter: 150 g
- Lemon juice: 1 tablespoon
- Sour cream: 2 tablespoons
- Kefir: 200 ml

Wash the dried apricots, prunes, and raisins, then grind them through a meat grinder (or whatever you have for chopping). Grate the orange zest, peel the orange, and add it to the dried fruits in the meat grinder. Add honey and mix. It should result in a thick, paste-like mass. Basically, if you're tired, you can skip making cookies - it's delicious as is. ))
- Dried apricots: 100 g
- Pitted prunes: 300 g
- Raisin: 70 g
- Oranges: 1 piece
- Honey: 2 tablespoons

Divide the dough into about three parts, sprinkle flour on each part, first shape it into a ball, then roll it out into a thin pancake. Cut the pancake into sectors like a pizza (about 12 pieces), place a generous spoonful of filling on the wide part of each piece, don't be stingy - it won't run. Fold the wide edge over the filling, press with your fingers and roll towards the center of the circle.

Pour sugar onto a flat plate, add cinnamon if desired, dip the finished rolls in sugar, pressing slightly, and place them on a baking tray lined with parchment paper or a silicone mat, sugar side up.
- Brown sugar: 2 tablespoons
- Brown sugar: 2 tablespoons
