Prepare the dough by mixing flour, sugar, cinnamon, and salt. Add cottage cheese and butter. Knead a soft dough. Transfer it to a floured surface and knead it a bit more to form a ball. Wrap the dough in plastic wrap and place it in the refrigerator for 30 minutes while you make the filling.
- Wheat flour: 250 g

Peel the washed apples and cut them into cubes. Place the chopped apples in a pot with sugar, butter, and cinnamon. Heat over medium heat until the butter melts, then add 2 tablespoons of water. Cover and cook for 10-12 minutes (the apples should become soft). Mix the starch with two tablespoons of water and add this mixture to the apples. Cover and simmer for another 1-2 minutes until thickened (a slightly jelly-like mass should result). Remove from heat. Let the filling cool for about 15 minutes.

If you are going to bake pies, preheat the oven to 190 degrees, line two baking sheets with parchment paper. Roll out the chilled dough thinly. Cut out 9 squares (15 by 15 cm) from the dough with a knife. Place a heaping spoonful of apple filling (or 1 tablespoon + 1 teaspoon) on one half of each square. Close with the other half and seal tightly. Place the pies on the baking sheet. If baking, make three cuts on each pie and bake for 25 minutes until golden brown. Cool for 5-10 minutes.

If you plan to fry the pies in a deep fryer, place them in the refrigerator for an hour (or freeze them). Heat the oil (about 5 cm high). Directly from the refrigerator, drop the pies in portions into the boiling oil, holding them until a golden-brown crust forms. Frying time varies from 2 to 3 minutes. Remove the pies from the oil and place them on a baking sheet lined with paper towels to absorb excess fat. Let cool for 5-10 minutes.
