Carrot candies are a delicate treat with a rich citrus aroma and light spicy notes of cardamom. Their history traces back to traditional European recipes where vegetables were used to make sweet desserts. Bright carrots caramelized with sugar acquire a rich flavor complemented by the freshness of orange and lemon. Slowly simmered, the mixture becomes thick and chewy, while the nut topping adds crunch and extra depth of flavor. These candies are a great option for a healthy sweet treat, perfect with tea or coffee.

A large grater is taken, with which the peeled carrot is grated.
- Carrot: 600 g

Orange and lemon are peeled, and juices are made from the fruits.
- Oranges: 1 piece

Carrots are placed in a heated pan to sauté a little. After a while, sugar is added to the carrots. It should be sautéed until it completely melts.

- Sugar: 200 g

After that, add the prepared orange juice and lemon juice, which need to be evaporated. Then, cardamom is added.

The carrot continues to simmer on low heat so that our mixture is thick and sticky. Then the pan is removed from the heat.

The resulting carrot mass will be a kind of plasticine, from which balls are to be shaped. These balls are rolled in crushed nuts, we used pistachios.
