Sponge cake with marshmallow

Marshmallow biscuit cake is a delicate and airy treat that combines classic sponge cake, creamy frosting, and the lightness of marshmallows. Such cakes are believed to originate from European pastry traditions, where the balance of textures and flavors is valued. The taste of this dessert is rich and harmonious: the sweetness of condensed milk intertwines with the slight tartness of cherries, while soft marshmallows add an amazing lightness. This cake is perfect for special occasions and celebrations, as its festive appearance and refined taste leave no one indifferent. It is especially good after soaking in the fridge when the layers become one and the textures even softer. This recipe allows for experimentation by adding different fruits or even chocolate sponge for a vibrant contrast.

Whisk the eggs and sugar very well and for as long as possible.
- Chicken egg: 3 pieces
- Sugar: 1 glass

Add flour. Whisk again very well.
- Wheat flour: 1 glass

Dissolve the soda with lemon juice. Add salt.
- Slaked soda: 0.5 teaspoon

Grease the sheets of paper, lay them on a baking tray. Pour the dough into it.
- Sunflower oil: 20 ml

Preheat the oven to 200 degrees for 20-40 minutes (keep an eye on it, but don't open it often).

Making cream. Mix butter with condensed milk and whip thoroughly until a smooth cream is achieved.
- Butter: 200 g
- Boiled condensed milk: 1 jar

Next, we take out the finished biscuit, cut it into pieces as much as possible. You can also bake another one with cocoa to alternate the colors.

Next, we spread cream on the cake layer, placing cherries around the edges and in the center with pieces of marshmallow that can be cut out. In fact, you can put anything and however you like, completely different fruits and even without marshmallow, but I did it this way.
- Cherry: 800 g
- Marshmallow: 3 pieces

We fill all the layers as we like and decorate the top with something. I wrote with sugar pencils and sprinkled grated chocolate.
