Russian pancakes on kefir

Russian pancakes with kefir are airy, tender flatbreads with a golden crust that delight with their soft taste and lightness. This recipe has roots in Russian cuisine, where kefir is traditionally used to give the dough special fluffiness. The pancakes have a subtle vanilla aroma and light sweetness, and thanks to the kefir – a pleasant tanginess. They are cooked without oil in a pan, making them less fatty and healthier. An ideal option for breakfast or a cozy family tea time. They are served with jam, sour cream, honey or fresh berries, creating a harmony of taste and texture.

Dough: Beat the eggs, add sugar and butter. Mix thoroughly.
- Chicken egg: 2 pieces
- Sugar: 5 tablespoon
- Vegetable oil: 1 tablespoon

Pour the kefir into the resulting mixture, then add boiling water.
- Kefir: 1 glass
- Boiling water: 1 glass

Sift the flour to aerate it and avoid lumps in the dough.
- Wheat flour: 1 glass

With gentle movements, we add flour little by little. Not all at once, but in parts. We mix.

Add salt, vanillin, and baking powder.

We leave the dough for 5 minutes.

The cooking process... is similar to making grandma's pancakes. No need to grease the pan with oil. Pancakes are cooked on a dry pan. If the cookware is too old and there's a risk of burning, you can put a piece of fat on the surface, sprinkle some water, or add a drop of vegetable oil. Using a ladle, we pour the batter in portions onto the pan. Voila!!!
