Potato cake with cherries and almonds

Cherry and almond 'Potato' pastry is a refined dessert with European charm, inspired by the classic Soviet recipe for 'Potato'. It features crumbly cookie crumbs, creamy butter, and sweetened condensed milk with a coffee aroma that creates a rich flavor with a light caramel note. The highlight of this version is the tartness of cherries that adds freshness to each bite, along with exquisite pine nuts and almonds that enhance the texture of the airy mass. Coating the dessert in cocoa and topping it with melted chocolate gives us a rich, deep flavor with an elegant nutty accent. Grind the cookies in a food processor until coarse crumbs remain. Some pieces should stay unground.
- Cookie: 350 g

Pour hot water over the cherries and let them sit for 15-20 minutes.
- Dried cherries: to taste

Add condensed milk (optional; you can replace condensed milk with boiled milk in coffee), sugar (I didn't add it, it's sweet enough for me), 2 tablespoons of cocoa powder, soft butter, and nuts (any kind can be used, but large ones should be chopped with a knife or ground at the initial stage along with the cookies). Mix everything by hand until a homogeneous mass is achieved (about 5 minutes).
- Condensed milk with coffee: 250 g
- Sugar: 50 g
- Cocoa powder: 4 tablespoons
- Butter: 100 g
- Pine nuts: 50 g

Melt the chocolate. I do it in the microwave, but it can also be done in a water bath (if the melted chocolate isn't liquid, you can add a teaspoon of butter or heavy cream).
- Dark chocolate: 40 g

Take a small amount of mass, form a ball and place 1-2 cherries inside. Roll the ball in cocoa and place it in a paper mold.
- Dried cherries: to taste
- Cocoa powder: 4 tablespoons

Pour half a teaspoon of chocolate on top and insert 1 almond. Place in the refrigerator for half an hour.
- Dark chocolate: 40 g
