For the test: mix flour, 30 grams of sugar and salt, add diced cold butter, and crush with a fork into fine uniform crumbs. Add cold water in 3 batches, kneading the dough thoroughly after each. The dough should become elastic and smooth. Form a ball, wrap it in plastic wrap and refrigerate for at least 30 minutes.

Remove the stones and cores from the fruits, slice them, place in a deep bowl, add sugar, mix, and let sit for 10 minutes.
- Apple: 150 g
- Plums: 250 g
- Peaches: 200 g
- Cane sugar: 100 g

Roll the chilled dough on a parchment sheet into a disk about 35 cm in diameter and 4 mm thick. Transfer to a baking tray. Place the fruits with their juice in the center of the disk and distribute evenly, leaving about 6 cm from the edge. Fold the free edges to form borders, brush with milk, and sprinkle with sugar.
