Cottage cheese buns

Cottage cheese buns are a delicate and airy treat valued in European cuisine for their mild flavor and ease of preparation. Historically, cottage cheese pastries were popular in rural homes where fresh cottage cheese was available daily. Sweet but not cloying, with a slight tang from the cheese and a crispy crust, these buns are perfect for breakfast or a cozy tea time. They are quick to make: the cottage cheese is mashed with sugar, then mixed with eggs and baking soda before kneading the dough. The buns are shaped by hand and baked until golden brown. They can be served with jam, honey, or sour cream while enjoying their incredible lightness and rich dairy flavor.
