Odessa-style cheese pancakes are a delicate and aromatic dish of Ukrainian cuisine that embodies the warmth of home comfort. Thin, golden pancakes made with milk and brushed with butter serve as the perfect base for a soft cheese filling. The tender cheese mixed with sour cream, powdered sugar, and lemon zest gives the filling a pleasant sweetness with a hint of citrus. Wrapped like envelopes, the pancakes are baked until soft and infused with a creamy aroma. They are traditionally served with sour cream, enhancing the flavor even more. Historically popular in Odessa, this dish has become a favorite treat at family gatherings. Pancakes are perfect for breakfast or dessert, creating an atmosphere of warm hospitality.
