The 'Spotted Dick' pudding is a classic British dessert known since the 19th century. Its name may be linked to the characteristic dark spots of raisins that adorn the soft dough. This pudding has a delicate, moist texture due to a special cooking method – steaming. The mixture of flour, breadcrumbs, and butter creates an airy base, while raisins, dried apricots, orange zest, and ginger give it a rich fruity aroma and a hint of spice. After cooking, the pudding is drizzled with golden syrup or maple syrup, making it even sweeter and juicier. Mix flour and breadcrumbs. Add sugar. Grate butter into the mixture. Stir until homogeneous. Add chopped dried apricots, raisins, orange zest, and grated ginger; mix well. Then add an egg, milk, and salt. Mix until smooth.
- Wheat flour: 150 g
- Breadcrumbs: 120 g
- Sugar: 120 g
- Butter: 120 g
- Dried apricots: 120 g
- Dark raisins: 400 g
- Orange zest: 1 tablespoon
- Grated ginger: 0.5 tablespoon
- Nutmeg: 0.5 teaspoon
- Chicken egg: 1 piece
- Milk: 150 ml
- Salt: pinch

Transfer the obtained mass to the mold. Level it out.

Cover the mold with foil, pressing it tightly against the dough and the edges of the mold.

The pie is prepared in a water bath for 3 hours. For this: prepare a pot (or any other container larger than the mold with the dough). Pour in water so that when the mold is placed in the pot, the edges of the mold are visible by 1.5–2 cm. Bring the water to a boil. Then place the mold with the dough inside the pot. Close the pot tightly (with a lid or foil) and let it cook for 3 hours (nothing will happen to the pie during this time, and no water needs to be added).

After 3 hours, remove the mold from the pot. Let it cool. Then drizzle with golden syrup or maple syrup (but can also be replaced with simple sugar syrup).
