Vareniki with cottage cheese is one of the most beloved dishes of Russian cuisine, bringing the warmth of home. The history of this dish goes back centuries when cottage cheese was considered a symbol of abundance and health. The delicate dough enveloping the sweet cottage cheese filling creates a perfect balance of flavors—softness, light sweetness, and pleasant sourness. Lazy vareniki are quick to prepare, and their airy texture makes them especially appetizing. They are served with fragrant butter or thick sour cream, adding richness to the taste. I use homemade cottage cheese, which I recommend to you as well. We will put it in a dish, add sugar, and mash it well with a spoon. You can add a little salt to the cottage cheese to taste while mashing.
- Cottage cheese: 500 g
- Sugar: 50 g

Now we beat one egg into the cottage cheese and mix it until smooth, just like with the sugar.

Let's divide the flour we have in half, add half to the mixture of cottage cheese and egg now, and leave the other half for dusting while shaping lazy dumplings.

Sprinkle some flour on the board and place a mound of cottage cheese mixture on top.

Using hands, gently roll the cottage cheese dough into a sausage shape.

We cut the sausage made from dough into small pieces using a sharp knife.

Now we pour about three liters of water into a pot, put it on the fire, and bring it to a boil. After the water boils, we gradually cook our lazy dumplings. We drop the dumplings into the boiling water, bring them to a boil, and cook on medium heat for about three minutes.

We take the ready dumplings out of the pot with a slotted spoon, place them on a plate while still hot, and generously coat them with butter; you can add a bit of sour cream to the dumplings if desired.
