In a tall glass, mix water, yeast, sugar, and 1 teaspoon of flour. Leave it in a warm place for 10 minutes.
- Water: 0.5 glass
- Dry yeast: 1 teaspoon
- Sugar: 1 teaspoon
- Wheat flour: 1 glass

In a bowl, mix flour, 2 tablespoons of olive oil, the starter, and salt. Knead the dough. There's no need to knead for long; just mix well with a fork, and the dough will be sticky and seem a bit runny at first. Cover with a towel and leave in a warm place for 30-40 minutes.
- Wheat flour: 1 glass
- Olive oil: 2.5 tablespoons
- Salt: to taste

Place on a silicone mat, sprinkle with flour and roll out to a thickness of 0.5 cm. Grease with sour cream, sprinkle with grated cheese, Provencal herbs, and place onion rings. Brush each ring with olive oil and salt. Top everything with a pepper mix.

The oven should be preheated to 250 degrees. Place the flatbread inside. Bake until golden brown. This will take about 15 minutes.
