Soak the semolina in milk for 30-40 minutes to swell, then add baking soda. Mix the cottage cheese well with a sweetener to avoid lumps. Add the yolk and the soaked semolina.
- Semolina: 3 tablespoons
- Milk: 50 ml
- Soda: pinch
- Cottage cheese: 160 g
- Sugar substitute: to taste
- Chicken egg: 1 piece

Whip the egg whites separately until frothy, then gently fold them into the batter. The batter is quite runny, so we start adding flour — flaxseed flour. Unlike other types of flour, it is not only healthy but also contains more protein than carbohydrates. Thus, its benefits are clear.

You can add cinnamon and crushed nuts to the dough. I didn't do this, but after trying the ready buns, I realized it would have been a great idea!

On the greased parchment, place half of the dough (4 rolls) spaced apart, as they will rise. On each roll, place half an apricot and cover it with the remaining half of the dough. You should end up with 4 balls.
