Tender apple pies embody the coziness and warmth of Russian cuisine. This recipe has its roots in traditional pies but features a special touch – airy kefir dough and sweet apple slices spiced with cinnamon. The pies are soft inside with a light crispy crust outside. They fill the home with the aroma of baked apples, providing a sense of warmth and comfort. They can be served as a dessert or sweet snack, complemented with powdered sugar or a scoop of vanilla ice cream. These pies are perfect for family tea gatherings, especially on cool days when you crave something cozy and warming.

1
Knead a soft dough from kefir, eggs, salt, butter, flour, and baking powder. Let it rest for 30-40 minutes.
- Chicken egg: 1 piece
- Salt: 1 teaspoon
- Vegetable oil: 2 tablespoons
- Baking powder: 1 teaspoon
- Wheat flour: 650 g

Peel the apples, slice them into rounds, and remove the core. Sprinkle them with lemon juice to prevent browning. Roll out half of the dough and place the apple rings on it, leaving a 1 cm gap between them.
- Apple: 4 pieces
3
Sprinkle sugar and cinnamon in the center of the apples (optional). Roll out the second half of the dough and cover the dough with apples.
- Sugar: to taste
4
Cut out pies with a glass slightly larger than apples. Fry the pies in vegetable oil on both sides. Place the finished pies on a paper towel to absorb excess fat. They can be served hot or cold with powdered sugar.
