Pancakes with poppy seeds and homemade chocolate are a delicate treat with rich flavor inspired by Russian cuisine. Airy pancakes smeared with butter have a subtle vanilla aroma and a golden crust. The slightly sweet and nutty poppy filling further unfolds during heating, while the homemade chocolate adds deep, velvety sweetness to the dessert. Traditionally, poppy is used in Russian baking symbolizing abundance and luck. This dish is perfect for a cozy family breakfast or a festive table. Serving pancakes with hot chocolate creates a special atmosphere of home comfort, and the combination of textures—soft pancakes, juicy poppy seeds, and thick chocolate—turns them into true gastronomic delight.

1
Preparing pancakes. In a deep bowl, break the eggs, whisk them with 1 tablespoon of sugar and 1/4 teaspoon of salt.
- Chicken egg: 2 pieces
- Sugar: 4 tablespoons
- Salt: pinch
2
Pour about 450 ml of milk into the eggs (it's better to have some extra milk on hand in case the dough is too thick). Whisk.
- Milk: 760 ml
3
Add all the flour. Whisk. Slowly pour in another 150 ml of milk (you can use less if the dough consistency is to your liking).
- Wheat flour: 170 g
- Milk: 760 ml
4
Add 4 tablespoons of sunflower oil to the dough. Mix.
- Vegetable oil: 5 tablespoon
5
On a well-heated and sunflower oil-greased pan, we bake pancakes. Each pancake is brushed with butter.
- Vegetable oil: 5 tablespoon
- Butter: 75 g
6
When the pancakes are ready, we prepare the filling. We grind the pre-soaked poppy seeds in a mortar (or, like me, blend them in a blender or coffee grinder).
- Poppy: 200 g
7
Add 2 tablespoons of sugar, vanilla sugar, and 100 ml of milk to the poppy seeds (it's better to pour the milk in portions — this makes it easier to control the filling's thickness). Heat the poppy seeds over the fire, stirring constantly.
- Sugar: 4 tablespoons
- Vanilla sugar: 10 g
- Milk: 760 ml
8
When the filling is ready, wrap it in pancakes in any convenient/preferred way.
9
For homemade chocolate, mix 2 tablespoons of cocoa powder, 1 tablespoon of sugar, and 25 grams of butter in a saucepan. Pour in 3 tablespoons of milk.
- Cocoa powder: 2 tablespoons
- Sugar: 4 tablespoons
- Butter: 75 g
- Milk: 760 ml
10
We put our future chocolate on the fire, bring it to a boil, and cook the chocolate for a couple of minutes. Stir the chocolate constantly! The chocolate should be smooth and glossy.
11
Serve pancakes drizzled with hot chocolate.
