Cake without baking and biscuit on pastille

This no-bake cake without sponge is based on apple pastille and is a real find for dessert lovers with an unusual texture. Turkish cuisine is famous for its sweets, and this recipe is another testament to its richness. The pastille gives the cake a light fruity tang and porous structure, perfectly replacing traditional sponge. The delicate cream made from cottage cheese and mascarpone with hints of vanilla and caramel creates an airy, velvety consistency, while the decorations of marmalade and nuts add colorfulness and layered flavor to the cake. This dessert is perfect for cozy evenings with a cup of tea or coffee and also makes an excellent option for holidays when you want to surprise guests with something new and original.

You take apple pastille, it should be brown and have a bread-like texture (that's why it replaces the biscuit component so well). I used Belevskaya. Cut into rectangular pieces about 0.8–1 cm thick and place them on a large flat plate for the cake (you can line it with foil to prevent sticking). I ended up with 8 pieces based on the size of my plate.
- Paste: 400 g

Next, take a pack of cottage cheese and mascarpone. Use the cottage cheese you like; I took medium fat. Put the pack of cottage cheese and the mascarpone in a bowl, add sugar, vanilla sugar, and caramel syrup (you can also use condensed milk instead of syrup). Mix everything thoroughly. You will get a very thick creamy mass. Spread it in a layer of 0.5–1 cm on top of the layer of pastila.
- Cottage cheese: 100 g
- Mascarpone cheese: 200 g
- Sugar: 0.5 glass
- Vanilla sugar: 10 g
- Caramel syrup: 2 tablespoons

Again cut the pastille and repeat the actions as in the first point, but place the pieces in a different direction so that the seams are not on top of each other.

Layer the remaining cheese-curd mixture and create a smooth surface with a knife.
- Cottage cheese: 100 g
- Mascarpone cheese: 200 g

Take your favorite gummies and sprinkles and decorate the cake artistically. You can also use your favorite nuts, candied fruits, berries, candies — whatever your heart desires. If the filling is too runny, you can put it in the fridge for half an hour before serving.
