Pour the milk into a pot and place it on medium heat, stirring constantly while adding salt and sugar until it boils. Immediately after boiling, add the kefir and stir until the mixture curdles. Strain this mixture through cheesecloth and hang it over the sink for 15 minutes to let the whey drain.

Whisk the egg and a little citric acid well. Add the prepared cottage cheese to the whipped egg and whisk again until a uniform fluffy mass is obtained.
