Kefir cake with raisins and nuts is a cozy treat that evokes the warmth of home and the traditions of Russian cuisine. Thanks to the kefir, the dough turns out airy and soft, while the raisins and nuts add a rich flavor with a hint of sweetness and a pleasant crunchy texture. This recipe originated in home cookbooks where simplicity of preparation and availability of ingredients played a key role. The cake is perfect for family tea gatherings; it can be served with fragrant tea or coffee, and powdered sugar adds a touch of tenderness. It is good not only fresh but also remains delicious and rich even after several days. The preparation does not require complex techniques, making it an excellent choice for beginner cooks.

1
Beat the eggs with sugar and a pinch of salt, add softened butter, flour, kefir, raisins, and chopped nuts.
- Chicken egg: 4 pieces
- Sugar: 300 g
- Salt: pinch
- Butter: 150 g
- Wheat flour: 450 g
- Kefir: 500 ml
- Raisin: 50 g
- Nuts: 50 g
2
Add baking soda and lemon juice. Mix all the ingredients well.
- Soda: 0.5 teaspoon
- Lemon juice: 0.5 tablespoon
3
Place the dough in a mold and bake in a hot oven at medium heat for 15-20 minutes, then at low heat for another 20-25 minutes (I baked it at 180 degrees for 20 minutes, then covered the cake with foil and baked for another 30 minutes. Baking time depends on the oven!).
4
Sprinkle powdered sugar on the cooled cake.
- Powdered sugar: to taste
