Dietary cottage cheese casserole with cherries

Dietary cottage cheese casserole with cherries is a delicate and airy treat that combines the soft texture of cottage cheese, the sweetness of honey, and the tartness of juicy cherries. This dessert originates from European cuisine, where cottage cheese casseroles traditionally hold a prestigious place among healthy and light dishes. By using egg whites instead of whole eggs and minimal sweeteners, it is perfect for those watching their figure but not wanting to give up pleasure. The casserole is fragrant with hints of cinnamon, vanilla, and fresh lemon zest, while the cherry syrup adds extra juiciness. It is great for breakfast or a light dinner paired with a cup of green tea or black coffee.

1
First, turn on the oven and preheat it to 200 degrees.
2
Remove the cherries from the pits, place them in a bowl, add a spoon of honey and raisins, mix and set aside.
- Cherry: 150 g
- Honey: 1 tablespoon
- Raisin: 50 g
3
Place the cottage cheese in a bowl with high sides (suitable for whipping), add lemon zest, vanillin, and cinnamon, and beat with a mixer.
- Low-fat cottage cheese: 500 g
- Lemon zest: 0.5 teaspoon
- Vanillin: pinch
- Cinnamon: to taste
4
Beat the egg whites with a pinch of salt.
- Egg white: 5 piece
5
Place the mixture of raisins and cherries on top of the cottage cheese mass, squeezing the juice into a bowl, then add the egg whites on top, gently mix (do not whip, but fold) with a spatula from top to bottom.
- Raisin: 50 g
- Cherry: 150 g
- Egg white: 5 piece
6
Line the mold with parchment paper, pour the mixture into the mold, and bake in the oven for 20-30 minutes — the finished casserole should be firm in the center.
7
Put the remaining cherry juice with honey in a water bath and reduce it until thickened.
- Honey: 1 tablespoon
- Cherry: 150 g
8
Cool the finished casserole in the mold for 10–15 minutes, serve on plates, and drizzle with syrup.
