Gingerbread cookies made from flaxseed flour and oats are a fragrant and crunchy treat that embodies the traditions of European baking. Ginger, widely used in cooking since ancient times, gives the cookies a spicy kick, while cloves add warmth and depth of flavor. Flaxseed flour makes it unique by adding a light nutty note and health benefits, while oats provide a pleasant texture. These cookies are perfect for cozy tea times on cool days; they warm you up and bring joy. The gluten-free composition makes it an excellent choice for those mindful of their diet, and the use of kefir gives it an especially tender texture. This treat can be served with warm tea, coffee, or even natural yogurt to highlight its complex flavor.
