Brew coffee and mix it with cognac. Let it cool.
- Strong coffee: 200 ml
- Cognac: 40 g

Separate the whites from the yolks. Whip the whites into a stable foam.
- Chicken egg: 3 pieces

Mix the yolks, powdered sugar, sour cream or mascarpone together. Then gradually add the egg whites and stir in one direction (preferably with a tablespoon). The cream is ready.
- Chicken egg: 3 pieces
- Powdered sugar: 3 tablespoons
- Sour cream 42%: 250 g

Place the ladyfingers or savoiardi in a mold, soak them in coffee, and add cream. Repeat the process once more (sponge — coffee — cream).
- Savoiardi cookies: 250 g
- Strong coffee: 200 ml

Put in the refrigerator for 24 hours. The dessert will soak and become very tender and airy. You can gently sprinkle cocoa on top.
