Strawberry burfi is a delicate treat inspired by French culinary refinement. This dessert combines the silky texture of dry milk, butter, and heavy cream, while strawberries add a refreshing fruity note. A light vanilla sweetness enhances its flavor, making burfi an ideal treat for tea time or a romantic evening. The origins of this dessert can be traced back to the Eastern tradition of burfi, but the French variation gives it a more sophisticated character. Frozen burfi melts softly on the tongue, gradually revealing the depth of flavor nuances. It can be served as a standalone treat or complemented with fresh berries. This dessert is a true embodiment of the harmony between sweetness and creamy softness.

1
We melt butter in a pan.
- Butter: 180 g
2
Pour sugar into the butter. When the mixture starts to boil, add the heavy cream while stirring thoroughly.
- Sugar: 100 g
- Cream 35%: 200 ml
3
Add strawberries. Store-bought frozen strawberries will soften easily in the pan, while fresh ones are better pureed beforehand.
- Strawberry: 300 g
4
Constantly stir until the mixture is homogeneous.
5
Gradually add dry milk. Be careful, the final consistency should match that of very thick, dense sour cream. Adjust the amount of dry milk added.
- Dry milk: 350 g
6
Turn off the heat and additionally mix the mass with a mixer.
7
Lay it in a mold (better to line it with food wrap), place it in the freezer until fully set.
