Strain the birch sap through cheesecloth and pour it into a jar. Add freshly squeezed apple and lemon juices, sugar, and honey, and mix until the sugar is completely dissolved.
- Birch sap: 500 ml
- Freshly squeezed apple juice: 500 ml
- Lemon juice: 2 tablespoons
- Sugar: 200 g
- Clover honey: 2 tablespoons

Cut the vanilla pod in half lengthwise, scrape out the small black seeds and add them to the juice along with the pod. Place the jar covered in the refrigerator overnight, then strain the juice again, pour it into a container and put it in the freezer until set. Stir the granita every half hour until frozen.
