Place marshmallows on half of the cookies and put them in the microwave for 30 seconds. The marshmallow will puff up and become soft. Cover with the remaining cookies, pressing the marshmallow like a sandwich. Leave the cookies for 30 minutes to let the filling set.

Melt the chocolate in a water bath and dip the cookies in it. If desired, you can sprinkle the cookies with coconut flakes or almond petals.
