Remove the zest from the orange along with the white part and cut into strips 0.5 cm thick. Boil water in a pot and blanch the zest for a couple of minutes. Change the water and repeat the process twice.
- Orange zest: 1 piece
- Water: 300 ml

Prepare the syrup by dissolving 200 grams of sugar in water over medium heat. Add the zest and simmer on low heat for 15-20 minutes. Let it cool. Place on baking paper and leave to dry overnight.
- Sugar: 520 g

Grind the nuts with sugar (80 grams). Whisk the yolks with the remaining sugar until creamy. Heat the milk and sour cream over low heat, adding vanilla by splitting the pod lengthwise. Pour the nuts into the milk and add the yolks. Cook without boiling (up to 82 degrees).
- Walnuts: 100 g
- Sugar: 520 g
- Egg yolk: 5 piece
- Milk: 250 ml
- Sour cream 35%: 250 g

Let the mixture cool down. Remove the vanilla and add chopped candied fruits (40 grams).

Place in the ice cream maker. When the ice cream is ready, add the liquid, slightly warm chocolate (melted in a water bath) and stir quickly.
