Orange-banana Tarte Tatin is a vibrant interpretation of the classic French dessert created by the Tatin sisters. Instead of traditional apples, caramelized oranges and bananas are used, adding freshness and exotic sweetness to the pastry. The crispy rye base with tender buttery dough pairs wonderfully with the fruit caramel, creating a rich flavor. This dessert can be served warm with a scoop of vanilla ice cream or enjoyed chilled to reveal the depth of fruity notes. The tart is perfect for cozy family tea times or festive gatherings, leaving an unforgettable impression. Its simplicity in preparation and exquisite taste make it an excellent choice for lovers of French pastries.

1
Preheat the oven to 190 degrees. Take out the silicone square mold (23x23 cm).
2
Peel the oranges. Cut 2 of them into rings 0.7–1 cm thick. Cut the remaining 2 into quarters and then into pieces 1 cm thick.
3
Heat the pan, add 5 grams of butter and 1.5 tablespoons of sugar to make caramel (there are many recipes for this), and place orange rings in the prepared caramel. Caramelize them for about 5 minutes until they turn a pleasant caramel color.
- Butter: 50 g
- Sugar: 100 g
- Oranges: 4 pieces
4
Arrange the orange slices evenly across the bottom of your dish.
5
Slice the bananas diagonally into rings (to make them oval instead of round). Also, caramelize them in a pan. Use 5 grams of butter + 1 tablespoon of sugar. Place in a mold.
- Bananas: 3 pieces
- Butter: 50 g
- Sugar: 100 g
6
Caramelize the remaining oranges (cut into pieces). Again, 5 grams of butter + 1 tablespoon of sugar. Place in a mold.
- Oranges: 4 pieces
- Butter: 50 g
- Sugar: 100 g
7
Make the dough. Beat 3 eggs with the remaining sugar (1.5 tablespoons) using a mixer. Add the remaining butter (35 grams) and continue beating. Add the baking powder and flour, mixing with the mixer on low speed until lumps disappear.
- Chicken egg: 3 pieces
- Sugar: 100 g
- Butter: 50 g
- Baking powder: 5 g
- Rye flour: 100 g
